Notes on Sources

The bulk of the recipes added up till October 2007 have been from an interesting cookbook entitled “The Kentucky Jail Food Service Cookbook” which appears to have been printed on mimeograph and comb bound sometime in the late 1960s or early 1970s. We have tried retained the very sparse style of these recipes, including an overfondness for commas. These recipes are indicated as “Source: KJFSC.”

Some recipes came to us as handwritten notes, note cards or paper, or a few hand typed recipes. None of these have indicated an author or origen. We have tried to note these as anonymous handwritten recipes.

Recently, we have come into possession of a cardfile of institutional recipes originally published by the US Department of Agriculture. These recipes provide both measure and weight lists for ingredients. The title card indicates it came from the Government Printing Office, entitled: Quantity Recipes for Type A School Lunches. It was prepared by the Nutrition and Technical Services Staff, in the Food and Nutrition Service and the Consumer and Food Economics Research Division of the Agricultural Research Service, and also contains contributions from the Department of Commerce’s National Marine Fisheries Services and the National Oceanic and Atmospheric Administration. The title card indicates that this is the August, 1971 revision. We will indicate this source with the reference “Source: School Lunches.”
