Corn Muffins
(YIELD: 25)
3 c. flour
1 c. corn meal
2 t., baking powder
1 c.+ 2 t. sugar
3 eggs
1-3/4 c. milk
3/4 c. + 2 t. butter, melted, or substitute
procedure;
1. combine dry ingredients in mixer bowl.
2. add eggs or water, milk, and butter or substitute, blend. batter will be lumpy. do not overmix.
3. measure (with a #16 scoop) into well greased muffin tins.
4. bake at 400 f. for 20-25 minutes
